Coconut chia pudding with fresh blackberries

one can of coconut milk

1/4 cup chia seeds

one teaspoon vanilla extract

one tablespoon pure maple syrup

Whisk together the coconut milk, chia seeds, vanilla extract, and maple syrup. pour into serving bowls and chill for at least three hours. In the first hour stir the pudding at least twice so the seeds do not clump. 

Serve with blended fresh blackberries and granola or your choice of berries.
